Our soba noodles are made fresh daily using local organic Japanese buckwheat grown at Aurora Farm in Linneus, Maine. Tak Sato began working with Matt and Sara at Aurora Mills and Farm in 2016 using a seed strain from Shintoku, a Hokkaido farming community famous for its soba noodles. This kind of buckwheat, called Kita Wase is very popular in Japan’s restaurants and homes. The buckwheat is processed into flour in the traditional style, using a specially made Japanese stone mill. The flour is then rolled into dough and cut into noodles at Yosaku, for our guests to enjoy in both hot and cold entrees.
